Penrhos Spirits has partnered with mission-led food company Oddbox to launch a new limited-edition summer gin designed with spritz season in mind, continuing a sell-out collaboration series that champions rescued produce and sustainable flavour innovation.
The new Wonky Apple and Fennel Gin with a squeeze of Lemon is the third release from the award-winning partnership between Penrhos Spirits and Oddbox, following the success of previous variants including the 2023 Cucumber and Apple Gin and last year’s viral Pear and Chilli edition, both of which sold out rapidly. Due to high demand, the brands have confirmed two collaborations for 2026, introducing both summer and winter editions.
Crafted using Oddbox’s rescued British apples, fennel and lemons that would otherwise go to waste, the new gin is designed specifically for the growing spritz trend. Apple leads the profile with crisp orchard sweetness, while fennel—rarely used in gin—adds a savoury, aromatic depth traditionally associated with Mediterranean cooking and herbal remedies. A lift of lemon brings brightness and balance, creating a complex yet refreshing spirit tailored for pre-dinner sipping and long summer afternoons.
The signature serve, The Wonky Spritz, combines the gin with chilled sparkling white wine and soda over ice, finished with apple, fennel and lemon garnish. It is positioned as a distinctly British take on the spritz, aligning with the continued rise of lighter, sparkling cocktails across Europe.
Harriet Evans, co-founder of Penrhos Spirits, said the team wanted to create “something unusual and uniquely designed for spritz season,” while Oddbox CEO Emilie Vanpoperinghe highlighted the collaboration as proof that “flavour and sustainability go hand in hand.”
Priced at £34.95, the 42% ABV gin launches on 5th June 2026 via penrhosspirits.co.uk and Oddbox’s online store, with sampling planned in Battersea Park on 28th May.
